Curry Chicken Salad
Ingredients
2 cups diced or shredded chicken breast or thighs
Can cook in instant pot with 1/2 cup water and salt for 22-25 minutes then shred
1/2 cup mayo
1 tbsp curry powder
1/4 tsp turmeric
Juice of 1/2 lemon
1/4-1/2 cup chopped red onion
2 chopped green onions
1/2 cup chopped celery
1/4 cup chopped apple or 1/4 cup chopped grapes
Salt and pepper to taste
