Curry Chicken Salad

Ingredients

  • 2 cups diced or shredded chicken breast or thighs

    • Can cook in instant pot with 1/2 cup water and salt for 22-25 minutes then shred

  • 1/2 cup mayo

  • 1 tbsp curry powder

  • 1/4 tsp turmeric

  • Juice of 1/2 lemon

  • 1/4-1/2 cup chopped red onion

  • 2 chopped green onions

  • 1/2 cup chopped celery

  • 1/4 cup chopped apple or 1/4 cup chopped grapes

  • Salt and pepper to taste
