Chicken Scampi

Ingredients

  •  1/4 c. butter

  • 1/8 c. olive oil

  • 1/4 c. finely chopped green onion

  • 1/2 Tbsp. minced garlic

  • 1 1/2 Tbsp. lemon juice

  • 1 lb. chicken breasts, cut into 1/2 in pieces

  • 1/2 tsp. salt

  • 1/4 tsp. black pepper

  • 1/8 c. minced fresh parsley (optional)

  • 1/2 tomato, chopped

  • buttered noodles or cooked rice

Instructions

In skillet, heat together butter and olive oil. Saute green onions and garlic. Add lemon juice, chicken, salt, pepper, and parsley. Continue cooking, stirring often, for 8-10 minutes, or until chicken is done. Add tomatoes and heat through. Serve over buttered noodles or hot rice.
